Easy Overnight Pickles

Quick refrigerator pickles are one of our favorite ways to make the most of summer’s cucumber harvest.
Easy Overnight Pickles

Ingredients
- 3 cucumbers
- 1 ½ cups apple cider vinegar or distilled vinegar
- 2 T sugar
- 1 T salt
- 1 tsp whole black peppercorns
- 3-4 cloves garlic
- 3 sprigs fresh dill
- 1 bay leaf
- ½ tsp red pepper flakes (can also add in whole dried red chili pepper)
Directions
- Slice the cucumbers into spears and place them in a large mason jar.
- In a small saucepan, combine the vinegar, sugar, salt, peppercorns, and garlic. Stir and bring the mixture to a boil.
- Remove from the heat and let the brine cool completely.
- Once cooled, pour the brine over the cucumber spears.
- Add the fresh dill, bay leaf, and red pepper flakes.
- Seal the jar with an airtight lid and refrigerate.
- Let the pickles chill for at least 24 hours before enjoying. They will keep in the refrigerator for up to 2 weeks.
Note: If you prefer a milder pickle, replace up to ½ cup of the vinegar with ½ cup water.
