Easy Overnight Pickles

Fresh, crisp, and ready in just 24 hours.

Quick refrigerator pickles are one of our favorite ways to make the most of summer’s cucumber harvest.

Ingredients

  • 3 cucumbers
  • 1 ½ cups apple cider vinegar or distilled vinegar
  • 2 T sugar
  • 1 T salt
  • 1 tsp whole black peppercorns
  • 3-4 cloves garlic
  • 3 sprigs fresh dill
  • 1 bay leaf
  • ½ tsp red pepper flakes (can also add in whole dried red chili pepper)

Directions

  • Slice the cucumbers into spears and place them in a large mason jar.
  • In a small saucepan, combine the vinegar, sugar, salt, peppercorns, and garlic. Stir and bring the mixture to a boil.
  • Remove from the heat and let the brine cool completely.
  • Once cooled, pour the brine over the cucumber spears.
  • Add the fresh dill, bay leaf, and red pepper flakes.
  • Seal the jar with an airtight lid and refrigerate.
  • Let the pickles chill for at least 24 hours before enjoying. They will keep in the refrigerator for up to 2 weeks.

Note: If you prefer a milder pickle, replace up to ½ cup of the vinegar with ½ cup water.
