Pesto from the Garden

This fresh mint and basil pesto is a simple way to bring garden flavors to pasta, grilled vegetables, or sandwiches.

Ingredients
- 1 cup fresh mint
- 2 cups fresh basil leaves
- 3 cloves garlic
- ½ cup grated Parmesan cheese (Grano Padano)
- 1 T lemon zest
- 1 T lemon juice
- ¾ cups olive oil
- Kosher salt to taste
- ½ cup toasted pistachio finely ground or ½ cup toasted pine nuts finely ground
Directions
- Add the mint, basil, garlic, Parmesan cheese, lemon zest, lemon juice, and olive oil to a blender or food processor.
- Blend until smooth.
- Season with kosher salt and blend again briefly.
- Transfer the pesto to a small bowl and stir in the pistachios or pine nuts.
- Taste and adjust the seasoning with more salt or lemon juice if desired.
