This fresh summer appetizer balances sweet watermelon, creamy goat cheese, and bright herbs for a pairing that’s as beautiful as it is delicious.
Compressed Watermelon & Heirloom Tomato Skewers
Ingredients
For the Skewers
- 1 small seedless watermelon (cut into sixteen 1-inch cubes)
- 16 pint-sized cherry tomatoes (preferably heirloom varieties for color contrast)
- 1-2 English cucumbers (sliced lengthwise into thin ribbons using a mandoline or Y-peeler)
- 16 wooden or bamboo skewers (4 to 6 inches)
For the Lavender Honey Whipped Goat Cheese
- 4 oz fresh goat cheese (chèvre), softened at room temperature
- 2 oz cream cheese, softened (helps create that smooth, pipeable texture)
- 1.5 tbsp local honey
- 1/2 tsp culinary lavender buds (finely minced)
- 1-2 tbsp heavy cream (just enough to loosen the mixture for whipping)
For the Finishing Touches
- High-quality balsamic glaze (for the drizzle)
- 1 fresh lemon (for zesting)
- 8-10 fresh mint leaves (cut into a fine chiffonade)
- Flaky sea salt (like Maldon)
Directions
Compress the Watermelon
Place your 1-inch watermelon cubes into a food vacuum-seal bag in a single layer. Seal on high vacuum to compress the flesh, turning it dense, translucent, and vibrant red. If you don’t have a vacuum sealer, place them in a zip-top bag, press all the air out using the water displacement method, and weigh it down flat in the fridge for 30 minutes.
Whip the Goat Cheese
In a small food processor or using a hand mixer, blend the goat cheese, cream cheese, honey, and minced lavender buds until uniform. Add the heavy cream 1 tablespoon at a time, whipping until the mixture is light, smooth, and holds its shape. Transfer to a pastry bag fitted with a small star or round tip and set aside.
Assemble the Skewers
Take a thin cucumber ribbon and fold it accordion-style. Thread it onto a skewer, followed by a cherry tomato, and anchor it into a cube of the compressed watermelon. Repeat for all 16 skewers and arrange them standing upright or flat on your serving platter.
Garnish and Serve
Pipe a elegant star or dollop of the lavender honey whipped goat cheese directly on top of each watermelon cube. Just before serving, drizzle the entire platter with the balsamic glaze, scatter the fresh mint chiffonade, grate fresh lemon zest over the top, and finish with a tiny pinch of flaky sea salt.
Sommelier Note: The intense, concentrated sweetness of the compressed watermelon balances perfectly with the savory pop of the cherry tomato. The rich, herbaceous goat cheese provides a beautiful bridge to the crisp acidity and subtle floral undertones of a great dry Rosé.
