Nicole's Pesto Shrimp Risotto

Some of our best memories are the incredible little leprechaun traps hidden in corners of our home on March 17th of years past. We wish we kept them for a good laugh at dinner. We enjoyed immensely the faces of our kids when the furniture was replaced by dollhouse size pieces and the toilet water was green. Simple pleasures for such a wonderful silly day! The Irish heritage of Sean lends itself to ALWAYS celebrating St. Patrick’s Day. However, this year, we are changing it up a bit. The corn beef will still garner the table, but our recipe pairing is going Italian. (Since the house cook is mostly Italian, what do you expect?)

Nicole learned to make risotto when she studied in Italy eons ago. It is her ultimate favorite dish and she gets a little playful with this one. The pesto addition is in honor of St. Patrick’s Day and while we may not be turning the furniture over and placing green food coloring in the lavatory this year, we will be dining on delicious food paired with wine. Enjoy!
