Baby Greens, Pear, Pecan & Chèvre Salad with Maple Vinaigrette

Fresh, crisp, and just a little sweet—this salad is a spring favorite. Creamy chèvre, juicy pear, and crunchy pecans bring the texture, while the maple vinaigrette ties it all together. Bonus: the dressing can be made ahead and kept in the fridge for quick salads throughout the week.
Baby Greens, Pear, Pecan & Chèvre Salad with Maple Vinaigrette
Ingredients
Salad:
- 1 bag baby greens
- 2 pears, sliced (or nectarines, or dried cherries)
- 1 c toasted pecans (or Marcona almonds)
- 4 oz chèvre cheese (or blue)
- 1/4 red onion, sliced thin (tossed in 1 T cider vinegar and 1 T sugar)
Dressing:
- 1/2 c cider vinegar
- 1/3 c pure maple syrup (or honey)
- 1 clove garlic, pressed (optional)
- 1 t salt
- 1/2 t pepper
- dash allspice
- 1/2 c canola oil
- 1/2 c olive oil (not extra virgin)
Directions
Make dressing: whisk together vinegar, maple syrup, garlic and spices. Taste and adjust for salt and sweetness—the flavor should be balanced, not overly sweet. While continuing to whisk, slowly stream in the oils until the mixture is fully emulsified.
Toss the greens in half of the dressing. Layer in pears, nuts, cheese and onions. Lightly drizzle with more dressing if desired but do not toss.
