Sean's Mom's Cheesy Potatoes

Often referred to as Midwest potluck casserole, these creamy and cheesy potatoes have been a beloved staple at family gatherings and holiday celebrations since the mid-1960s.

Perfect for feeding a crowd, this comforting dish is easy to prepare in advance, making it a go-to recipe for potlucks, family dinners, and festive occasions. Ingredients

  • 36 ounces shredded frozen hash browns
  • ½ cup melted butter
  • 1 tsp salt
  • ¼ tsp pepper
  • ½ chopped yellow onion
  • ½ can of cream of celery
  • ½ pint sour cream
  • ½ pint plain yogurt
  • 1 cup shredded sharp and Monterey Jack cheese

 

Topping

  • 2 cups crushed corn flakes
  • ¼ cup melted butter

Directions

  1. Preheat oven to 350 degrees. Butter one 9 x 13 casserole dish.
  2. Mix everything except the potatoes and cornflakes.
  3. Defrost frozen hash browns and drain out excess water (could put in refrigerator the night before). Blend hash browns and cheesy mixture together.
  4. Top with crushed buttered corn flakes and place in the oven for 45 minutes to 1 hour. Test to make sure hot all the way through.
  5. Serve hot and thoroughly enjoy.
