Chocolate Mousse with Red Wine Soaked Cherries

Enjoy a new way to incorporate wine into dessert with this luscious and visually stunning treat makes it the perfect sweet ending to any meal.

Ingredients

Chocolate Mousse

  • 8oz Heavy Cream
  • 1 TB confectioner sugar
  • 1 cup good quality dark chocolate, chopped

Cherry Topping

  • 8 oz dried cherries
  • ¼ c granulated sugar
  • ⅔ c Nicole Marie Red Blend

Whipped Cream

  • 6 oz heavy cream
  • 2 tbsp granulated sugar

Garnish

  • Pinch of salt
  • Mint leaf

Directions

In a small saucepot, combine 4 oz of heavy cream and confectioners sugar. Heat over medium heat until it gently simmers along the pot’s edges.

Place the chopped chocolate in a heatproof bowl. When the cream is heated, pour it over the chocolate. Slowly whisk until the mixture is combined and smooth.

Whisk in the remaining 4 oz of heavy cream. Cover the bowl with plastic wrap or foil and refrigerate overnight.

The next day, using an electric hand mixer, whip the chocolate mousse until soft peaks form. Depending on your equipment, this can also be done with a countertop mixer.

In a small saucepot, combine cherries, 4 tbsp granulated sugar, and Nicole Marie Red Blend. Bring to a light boil, stirring frequently. Simmer for 10-15 minutes until the cherries are plumped and the liquid has gently thickened. Set aside to cool.

In a separate bowl, use an electric beater or whisk to whip 6 oz of heavy cream and 2 tbsp granulated sugar until soft peaks form.

To compose, I love using small mason jars or coupe glasses. Pipe or spoon the mousse into the mason jars or glass, top the mousse with a pinch of salt, and add whipped cream. Spoon the cherries and liquid on top and garnish with mint leaf and shaved chocolate.
